Cooking Classes


Get ready to kick-start your health and take it to a whole new level. Where? At our premier, Plant-Based Cooking Summit. You’ll learn first-hand how to prepare delicious whole foods, plant-based meals, with no added oils. Yes, you’ll learn how to make heart-healthy, tasty, easy and oh-so scrumptious stews, breads, soups, salads, creamy dressings, sauces, desserts, snacks, muffins, one pot casseroles, relishes, breakfast foods and so much more. And this is how we’ll do it.


In this session, we are laying out the context for the Summit and we plan to open with a presentation on, The Science Behind a Whole-Foods, Plant Based Diet; Exploring the Data Behind how to Achieve Optimal Health. This session will be led by Dr. T. Colin Campbell, co-author of “The China Study”. Hailed as the most comprehensive study of nutrition ever conducted, Dr. Campbell will share the findings from this study, specifically the implications for diet, weight loss, and long-term health. He’ll then be available throughout the summit, joining us for meals and daily Q & A sessions.


We will then dive into our fun and dynamic cooking program. Each day for the next four days, we’ll begin at 9:00 AM with a large group interactive session. These 9:00 AM sessions, taught by our cooking chefs, will cover:

Day 1: The ABC’s of Plant Based Cooking

Day 2: Kid Approved! I love it! 

Day 3: Heavenly, Heart Healthy Desserts! 

Day 4: And Yes! My Diet (and my ‘go to’ meals) have Expanded Exponentially!


Roll up your sleeves and be prepared to have fun in the kitchen! In each session, you are going to cook with one of our top cooking instructors, preparing your lunch and dinner meals. But wait; you are not only cooking your meal, but you’ll also have the opportunity to engage, one-on-one with our instructors, learning lots of wonderful tips, ideas and suggestions. This will be done in small group settings with 8-12 people. Lunch sessions start at 10:30 AM and end at 1:30 PM and dinner sessions start at 4:30 PM, ending at 7:30 PM. Essentially, you and your group, will rotate between the villas, attending all eight classes. The topics for the classes are as following. 

Your Favorite Foods: Pizza Made 3 Different Ways   

Pizza is arguably America’s favorite food, but it can also be one of the least healthy foods. In this class, we will look at pizza from a healthy perspective—whole grain and gluten free crusts, alternatives to cholesterol clogging cheeses, fresh vegetable toppings and delicious sauces that make you say YUM!!!

Quick and Easy Meals: Beans and Instant Pots    

Beans are the perfect starting point for any meal and better yet, they are incredibly versatile. From savory lentil loafs to tasty tacos to mock tuna spreads to barbecue bean curls, you’ll learn how to prepare these dishes quickly and easily. And yes, you’ll also learn how to make these meals using your instant pot. 

A Six Course Ethiopian Meal   

In this unique and special dining experience, you’ll learn first hand how to make an authentic injera sourdough flatbread, used as the “spoon”, for six mouthwatering dishes (some spicy and some mild). With a unique blend of spices, you’ll then learn how to make stews or wat as well as a lemony salad of fresh vegetables. You’ll see first hand how healthy never tasted so good.

 Sandwiches, Wraps & Spring Rolls: Satisfying and Irresistible      

While learning to prepare a wide range of collard wraps, lettuce wraps, thai summer rolls and different sandwich fillings (such as a chickpea avocado spread, a mock tuna spread and a basil pesto spread), you’ll also learn how to make a basic plant-based mayonnaise spread which can then be made into a tasty chipotle sauce.

Let’s Be Creative: Same Ingredients, Three Different Dishes  

An onion, like any other vegetable has a wide range of uses and more importantly flavorings -depending on how it’s prepared. In this session, we’ll take a box of vegetables from our local farmers market and use these same vegetables to prepare three different meals, highlighting different cooking techniques, herbs and spices.

Serving Skeptics: Hosting a Dinner Party for our Meat Eating Friends and Family   

In this class, you will plan, discuss and then prepare a complete dinner party from appetizer to dessert.  You will learn how to host guests with familiar flavors and comfort foods.  Each menu item will be selected with your meat eating guests in mind — learning how to take your favorite comfort foods and make them into delicious plant-based meals.

Soup’s On!

Recipes and tips to bring the world’s most popular comfort food to the family table. Chef Del has been making soups in vegetarian and vegan kitchens for 27 years and he wants to share his soup making secrets with you. Learn how to make soup from start to finish and how to flavor healthy soups without meat, dairy, or added oil.

Asian Fusion: Stir Fries, Curries and Summer Rolls   

Learn to prepare a wide array of lightly sauteed vegetable dishes, cooked with savory herbs, curries and delectable spices — preparing dishes that everyone can enjoy.


Lake Lure Kayak

Each day, you’ll have an afternoon break, starting at 1:30 PM and ending at 4:30 PM, allowing you to relax and enjoy the beautiful mountain setting. You can choose to take a short walk or if you want a longer strenuous hike, there are several beautiful trails near the resort. You can also play tennis, pickle ball, basketball or swim in the indoor pool – or you may want to rent a bike, canoe, pontoon boat or kayak. Some may even try to squeeze in a game of golf. And for those who want to be pampered, you may visit the small Rumbling Bald Resort spa and choose from a range of services, including skin and nail care to soothing massages. And for those who want to merely read, you can sit on your back porch and relax!


Movies, arts exhibitions, poetry readings, music and even a “Dirty Dance” tune (since “Dirty Dancing” was filmed on Lake Lure) are just a few of the events offered during the Summit. And even better, we’ll prepare a heavenly, heart-healthy, plant based dessert!
